It\u2019s all about the taste, and there are three factors that determine it.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Water<\/h2>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-1 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:66.66%\">\n<p>Water quality is crucial in determining the caliber of a Sake. Iiyama\u2019s untouched nature produces \u201cdelicious\u201d water, as the snow cloaking the mountainous landscape slowly permeates the soil to result in a runoff of pure river water.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:33.33%\">\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"746\" height=\"446\" src=\"https:\/\/www.iiyama-ouendan.net\/en01\/wp-content\/uploads\/sites\/2\/2021\/02\/sake2.png\" alt=\"\" class=\"wp-image-1610\"\/><\/figure>\n<\/div>\n<\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Rice<\/h2>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-2 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:66.66%\">\n<p>The key raw ingredient of sake is rice. The fine, dry sake has a keen aftertaste, and boasts a diverse fanbase. Mount Mizuo\u2019s spring water yielded the results closest to this ideal. Here we use the same technology to produce our standard sake and our top class Daiginjo. There are easier ways, sure, but machines just can\u2019t beat hands. We are also very lucky to be surrounded by Iiyama\u2019s advanced rice cultivation and technical expertise \u2013 I can convey a general image of the type of grain I want, and they manage to come up with exactly what I was thinking. The northern-most brewery in the Prefecture taps into the aquifer under Mount Nabekura, spanning Iiyama City to Niigata Prefecture as its water source. This is the type of sake that through it\u2019s taste, can showcase the local colour and characteristics. Perhaps the biggest defining characteristic of Nagano, and especially Iiyama, is that all 3 crucial factors in brewing a good sake &#8211; water, rice and Toji \u2013 can be locally sourced.
